Crock-pot Beef and Broccoli


Ingredients:
  • 1 lb boneless beef chuck roast, sliced into thin strips
  • 1 cup beef consomme
  • 1/2 cup soy sauce
  • 1/3 cup brow sugar or honey
  • 1 TBSP sesame oil
  • 3 garlic cloves, minced
  • 2 TBSP cornstarch
  • fresh broccoli florets (as many as desired)
  • hot cooked rice
Directions:
  • Place beef in crock-pot
  • In a small bowl, combine consomme, soy sauce, brown sugar/honey, sesame oil, and garlic. Pour over been. Cook on low for 6-8 hours
  • In a cup, stir cornstarch and 2 TBSP sauce from the crock-pot until smooth. Add back to crock-pot and stir well to combine.
  • Add broccoli to the crock-pot. Stir to combine.
  • Cover and cook an additional 30 minutes on high
  • Serve over hot cooked rice. 

Notes: The sauce didn't thicken very well for me, but still tasted great. I also added bok choy when adding the broccoli.
