Ingredients:
- 8 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 TBSP lemon juice
- 1 tsp vanilla
- 20-24 vanilla wafers
- 1 can cherry pie filling
Directions:
- Beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy
- Line small muffin pans with paper baking cups and place a vanilla wafer in each
- Fill cups 3/4 full with cream cheese mixture
- Bake at 375 for 15-20 minutes or until set
- Top with pie filling and chill
Notes: I recommend letting them sit for about a day before serving.
