Cherry Petites

Ingredients:
  • 8 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 TBSP lemon juice
  • 1 tsp vanilla
  • 20-24 vanilla wafers
  • 1 can cherry pie filling
Directions:
  • Beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy
  • Line small muffin pans with paper baking cups and place a vanilla wafer in each
  • Fill cups 3/4 full with cream cheese mixture
  • Bake at 375 for 15-20 minutes or until set
  • Top with pie filling and chill
Notes: I recommend letting them sit for about a day before serving.
