Chicken Tortellini Soup

Ingredients:
  • 1 can (approx. 10 oz) chicken broth
  • 1/2 cup cooked tortellini
  • 1/8 cup chopped, fresh or frozen spinach

Directions:
  • Simmer broth with cooked tortellini for 3-4 minutes. 
  • Add spinach and simmer for an additional 3-4 minutes.

Notes: I usually add some Italian seasoning to the broth while simmering and sprinkle with some Parmesan cheese before serving.
