Baked Broccoli Cheese Bites

Ingredients

  • 16 oz frozen, chopped broccoli, thawed and drained of liquid (can also use fresh, steamed broccoli)
  • 1 1/2 cup cheddar cheese, shredded
  • 3 eggs
  • Salt and pepper, to taste
  • 1 cup Italian breadcrumbs
Directions
  • Mix all ingredients together in a large bowl
  • With your hands, form small patties and lay on a parchment lined baking sheet
  • Bake at 375 for 25 minutes, turning the patties after the first 15 minutes
Notes: Very good. I don't have parchment paper laying around, but foil with a quick coat of cooking spray does the trick just fine.
