Zucchini Bruschetta

Ingredients

  • Zucchini
  • Olive oil
  • Garlic powder
  • Small tomato
  • Shredded cheese (mozzarella, Parmesan, or mixed blend)
Directions
  • Slice zucchini in half
  • Slice off the bottom of each half just enough to keep it stable
  • Brush top of each half with olive oil and top with garlic powder
  • Top with thinly sliced tomato, cheese, salt and pepper to taste
  • Bake at 375 for 20-30 minutes or until soft.
