Zucchini Bruschetta
Ingredients
- Zucchini
- Olive oil
- Garlic powder
- Small tomato
- Shredded cheese (mozzarella, Parmesan, or mixed blend)
Directions
- Slice zucchini in half
- Slice off the bottom of each half just enough to keep it stable
- Brush top of each half with olive oil and top with garlic powder
- Top with thinly sliced tomato, cheese, salt and pepper to taste
- Bake at 375 for 20-30 minutes or until soft.
