Ingredients:
- 1 bundle asparagus
- 1/2 cup flour
- 2 eggs
- 3/4 cup breadcrumbs
- 1/4 cup Parmesan cheese
- Salt and pepper to taste
Directions:
- Combine breadcrumbs, Parmesan cheese, salt, and pepper and spread on a large plate.
- Lightly beat eggs in a large bowl (large enough to dip the asparagus in)
- Dredge the asparagus with the flour, then dip into the egg mixture.
- Roll asparagus in the breadcrumb mixture and place on a baking sheet.
- Bake at 425 for 7-13 minutes depending on desired crispiness.
Notes: Soo good and so quick to make.
