Asparagus Fries

Ingredients:
  • 1 bundle asparagus
  • 1/2 cup flour
  • 2 eggs
  • 3/4 cup breadcrumbs
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste

Directions:
  • Combine breadcrumbs, Parmesan cheese, salt, and pepper and spread on a large plate.
  • Lightly beat eggs in a large bowl (large enough to dip the asparagus in)
  • Dredge the asparagus with the flour, then dip into the egg mixture.
  • Roll asparagus in the breadcrumb mixture and place on a baking sheet.
  • Bake at 425 for 7-13 minutes depending on desired crispiness.

Notes: Soo good and so quick to make.
